If I think of coffees that benefit from a little more thorough cooking, 2 terroirs come to mind: Sumatran coffees and Mexican ones. While the quality of Sumatra varies greatly from year to year, the coffee we use from the Chiapas region is stable and complex. Its natural spicy and earthy aromas combine wonderfully with the caramelization provided by a roast similar to a second crack.
